Jump on enemies only. This is because that is the only way they leave coins, the rest leave a ton of starbits or whatever.
Spin near torches to put out the fires.
Spin near doors to make coins appear.
Ground Pound areas of smashed rock on the floor
Break brick blocks
Shoot at glowing lights and plants in the ground to make coins pop out.
Do cool stuff and visit any secret areas you can find, as some have enemies which can be killed for coins, bricks that can be broken and just money floating in the air.
