Sounds a bit strange this, but I will personally start by saying that they butchered the Mario World levels in Super Mario Kart, and later games with a few glaring problems with the course designs.
Vanilla Lake
Vanilla Lake seems to be named after Vanilla Dome in Mario World, but what is the similarity? Vanilla Dome was a huge set of caves, filled with lava, monsters and all kinds of things, and had not a foot of ice in the entire area. There were no ice blocks, the environment was so not flat and plain, this area is a disgrace to Vanilla Dome.
Choco Island
Again, how is this like the Mario World one? Super Mario World Choco Island was not a desert, regardless of what anyone may think. It was full of life in many places, and had green fields, pipes, lakes, ghost houses and forts/castles littered around, as well as much prehistoric enemy amounts such as Dino Rhinos and Rexes. Yet in Mario Kart, it has become a muddy desert? It had only one level with mud in the Super Mario World game, so how can that turn into a muddy, desert like area with piranha plants, when both mud and piranha plants were so rare? And what happened to the wildlife?
Oh, and did you know the first game where Sherbet Land appeared was not a Mario game, or a Mario Sports game but Wario Land, Super Mario Land 3? More in the next post.
